Why

Eating salad is an easy way to get the recommended 2½ cups of vegetables each day. There’s evidence that leafy greens — as well as vegetables like carrots that are rich in carotenoids, a type of antioxidant — may help lower the risk of cognitive decline, according to a review published in Current Nutrition Reports in 2025. Wash your produce well before eating.
