Avocado and Grapefruit Salad

Creamy avocado cuts the tart bite from grapefruit in this delicious side salad.

Prep/Cook Time: 20 Minutes, Servings: 6

Ingredients

  • 8 cups torn mixed salad greens
  • 2 grapefruit, peeled and sectioned
  • 1 avocado, pitted, peeled and sliced
  • 2 tablespoons raspberry vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon water
  • 1 teaspoon sugar
  • ⅛ teaspoon salt

Directions

  1. On a large serving platter or six individual salad plates, arrange the salad greens, grapefruit sections and avocado slices.
  2. For dressing, in a small bowl, whisk together vinegar, oil, water, sugar and salt. Drizzle dressing over the salad.
