What’s a low-fat, high-fiber substitute for croutons on a salad?

The versatile chickpea, easily added to salads, is a nutritional powerhouse, high in fiber and protein as well as brain-healthy vitamins and minerals, including magnesium. Too much dressing or cheese, on the other hand, can drown an otherwise healthy salad in excess fat and calories. As for chow mein noodles, a half cup adds grams of fat and is low on fiber, 2 grams.
