Maple-Lime Roasted Sweet Potatoes

In this roasted sweet potato recipe, a touch of lime, along with real maple syrup, brown sugar and cinnamon, adds Caribbean-style zest to balance the natural sweetness of the potatoes.

Prep/Cook Time: 1 Hour, Servings: 12

Ingredients

  • 2 tablespoons pure maple syrup
  • 2 tablespoons dark brown sugar
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons sunflower oil
  • 1 teaspoon salt
  • ½ teaspoon ground cinnamon
  • Pinch of cayenne pepper
  • 4 pounds sweet potatoes, peeled and cut into 1-inch pieces
  • Zest of 3 limes

Directions

  1. Preheat oven to 350°F.
  2. Combine maple syrup, brown sugar, butter, oil, salt, cinnamon and cayenne in a large bowl. Add sweet potatoes and toss until thoroughly coated. Transfer to a large rimmed baking sheet. Roast, stirring every 15 minutes, until tender, 45 minutes to 1 hour. Sprinkle lime zest over the sweet potatoes and gently stir to distribute.
