Hummus & Greek Salad

Tomatoes, cucumber, red onion and feta top arugula in this quick Greek salad. Served with whole-wheat pita and prepared hummus, it makes a filling, yet healthy lunch.

Prep/Cook Time: 15 Minutes, Servings: 1

Ingredients

  • 2 cups arugula
  • ⅓ cup cherry tomatoes
  • ⅓ cup sliced cucumber
  • 1 tablespoon chopped red onion
  • 1½ tablespoons extra-virgin olive oil
  • 2 teaspoons red-wine vinegar
  • ⅛ teaspoon ground pepper
  • 1 tablespoon feta cheese
  • 1 4-inch whole-wheat pita
  • ¼ cup hummus

Directions

  1. Toss arugula in a bowl with tomatoes, cucumber, onion, oil, vinegar and pepper. Top with feta. Serve with pita and hummus.
