Salmon pairs nicely with fruit and herbs — like the strawberries and basil in this summery salad.
Prep/Cook Time: 20 Minutes, Servings: 2
Ingredients
- 4 cups torn mixed salad greens
- 2 2.5-oz. pouches skinless, boneless salmon, drained
- 2 cups halved fresh strawberries, divided
- 1 tablespoon snipped fresh basil
- 3 tablespoons white balsamic vinegar
- 2 teaspoons honey
- ¼ teaspoon ground ginger
- Dash cayenne pepper
- 2 tablespoons chopped pecans
Directions
- In a large bowl, toss together salad greens, salmon, 1⅓ cups of the strawberries, and the basil. Divide greens mixture among two serving plates. Set aside.
- For vinaigrette, in a blender or food processor combine the remaining ⅔ cup strawberries, vinegar, honey, ginger and cayenne. Cover and blend or process until smooth. Spoon vinaigrette evenly over greens mixture on plates. Sprinkle with pecans.
