Salmon Salad With Strawberry Vinaigrette

Salmon pairs nicely with fruit and herbs — like the strawberries and basil in this summery salad.

Prep/Cook Time: 20 Minutes, Servings: 2

Ingredients

  • 4 cups torn mixed salad greens
  • 2 2.5-oz. pouches skinless, boneless salmon, drained
  • 2 cups halved fresh strawberries, divided
  • 1 tablespoon snipped fresh basil
  • 3 tablespoons white balsamic vinegar
  • 2 teaspoons honey
  • ¼ teaspoon ground ginger
  • Dash cayenne pepper
  • 2 tablespoons chopped pecans

Directions

  1. In a large bowl, toss together salad greens, salmon, 1⅓ cups of the strawberries, and the basil. Divide greens mixture among two serving plates. Set aside.
  2. For vinaigrette, in a blender or food processor combine the remaining ⅔ cup strawberries, vinegar, honey, ginger and cayenne. Cover and blend or process until smooth. Spoon vinaigrette evenly over greens mixture on plates. Sprinkle with pecans.
