Ingredients
- 2 cups mixed salad greens
- ½ cup sliced cucumber
- 2 tablespoons grated carrot
- 1½ teaspoons extra-virgin olive oil
- 1½ teaspoons balsamic vinegar
- Pinch of salt
- Pinch of ground pepper
- 1 6½-inch whole-wheat pita bread, toasted
- ¼ cup hummus
Directions
- Arrange greens, cucumber and carrot on a large plate. Drizzle with oil and vinegar. Sprinkle with salt and pepper. Serve with pita and hummus.
